Raw, or cooked?
Properly called lyophilisation, freeze-drying freezes raw food and uses a deep vacuum to vaporise ice without cooking it. Because nothing is cooked, proteins are not denatured and nutrients stay where they were. The result? Pure, shelf-stable raw food that is raw again in minutes.
Even gentle cooking changes food. Heat in all its forms denatures proteins, destroys heat-sensitive vitamins, and oxidises polyunsaturated fats. Worse, high heat triggers the Maillard reaction, locking up essential amino acids like lysine and reducing protein digestibility.
